Pulses – Matilda Lentils

Our certified organic* lentils are grown near Naracoorte in South Australia in fertile, nutrient-rich, healthy soils which are particularly suited to the production of leguminous plants.
Known both as green or brown lentils, the Matilda variety are easy to prepare and make delicious stews, soups and salads, especially when tossed with good quality extra virgin olive oil and fresh herbs. They do not need soaking and hold their shape when cooked.
To prepare, rinse thoroughly in cold water. Then drain and inspect them. Remove any grit and little stones. Boil gently in at least three times their volume of water. Check to see if they are ready after about 20 minutes. They can take 30 minutes or more until tender. Do not add salt until they are cooked.
