Pulses don’t come any fresher than the new season’s Nolans Road Matilda Lentils.  They are the 2011 harvest and grown on a certified organic* farm in South Australia’s Limestone Coast in fertile, nutrient-rich, healthy soils which are particularly suited to the production of leguminous plants.  While pulses are sold dried, the closer they are to their harvest date the more nutrition they have, the better they cook and the more delicious they taste. Nolans Road lentils come fresh from the grower to you.

The Matilda is a special Australian variety of green lentil. Green lentils may also be referred to as brown, yellow, Chilean or Continental lentils.  They are easy to prepare and make delicious stews, soups and salads, especially when tossed with good quality extra virgin olive oil and fresh herbs. They do not need soaking and hold their shape when cooked.

To prepare, rinse thoroughly in cold water. Then drain and inspect them. Remove any grit and little stones. Cook them in at least three times their volume of water, keeping the water barely simmering.   Check to see if they are ready after about 20 minutes but be patient and don’t be tempted to turn up the heat. They can take 40 minutes or more until tender. Do not add salt until they are cooked.

 

Lentils have been a staple crop since the beginning of agriculture. Of all legumes, lentils are the richest in protein (24 to 25%), iron and vitamin B2, and the lowest in fat (0.6%).
